Contrast is the difference between two different things. In photography, contrast is often referred to in the context of colour. It can also be related to lighting and tonal values within an image. The bigger the difference between the two extremes the higher the contrast.
Many imaging software programmes offer contrast sliders to either increase or decrease the amount of contrast in an image. In Photoshop there are many different tools that you can use to alter the contrast including Levels and Curves but you can also change it by heading up to Image in the menu bar before going down to adjustments and then onto brightness/contrast.
The image on the right compares two different contrasts. A low contrast is shown on the left and a high contrast can be seen on the right.
